pesto shrimp on linguini

Ingredients:

1 pound peeled and deveined large uncooked shrimp

1 recipe Pistachio Pesto

1 Tbsp olive oil

1 pound linguini

 

Directions:

Remove tails from shrimp by breaking off the tip and slipping the tails off.

Combine 1 tablespoon pesto with 1 tablespoon olive oil in a large bowl. Toss with the shrimp. Set aside.

Heat grill to high. Grill shrimp until just cooked through and slightly charred on the outside. About one minute per side. Set aside.

Meanwhile cook linguini according to the package. Drain.

Toss with Pistachio Pesto. Top with grilled shrimp.

 

Serves 4
