mashed acorn squash

Ingredients

2 acorn squash, split and seeded

2 Tbsp butter

2 Tbsp pure maple syrup

Salt and pepper

 

Directions

Preheat oven to 350 degrees

Cover a rimmed baking sheet with foil. Season the inside of the squash with salt and pepper. Place cut side down.

Bake for 45 minutes or until tender. Cool. Scoop squash into a microwave dish. Stir in 2 tablespoons butter and two tablespoons maple syrup. Taste for seasoning. Cover. (Can be done several hours in advance- place in refrigerator.)

Reheat in microwave on 50% power for two minutes or until heated through, stirring occasionally.
