macerated berries with lemon curd sauce

7-8 ounces Greek yogurt

1/3 cup bottled lemon curd

1 tablespoon honey

1/4 teaspoon pure vanilla extract

1 pint sliced strawberries

1 cup raspberries

1 cup blueberries

2 tablespoons sugar

3 tablespoons limoncello liqueur

Fresh mint springs



Whisk together the yogurt, lemon curd, honey, and vanilla. Cover and refrigerate. (This can be made a day ahead of time. Bring to room temperature before serving.)

Layer the berries in a bowl. Carefully toss the strawberries, raspberries, blueberries together with the sugar and limoncello. Let stand at room temperature for about 15 minutes so the berries can macerate with the sugar and liqueur.

To serve place a generous spoonful of berries on a plate or in a bowl, top with a dollop of lemon curd sauce. Garnish with a sprig of fresh mint.
