grilled shrimp

Ingredients:

2 lbs extra-large or colossal peeled and deveined frozen shrimp

¼ cup good Italian dressing

 

Directions:

Place the shrimp in a large bowl. Cover with cold water. Place in the frig until thawed. Drain and rinse with cold water to remove any remaining ice.

Toss the shrimp with the Italian dressing. Let sit at room temperature for fifteen minutes.

Heat grill to high.

Grill the shrimp for one and half minutes per side until just pink and cooked through. Take care not to overcook.

To do ahead:

Grill the shrimp for one minute per side or until just pink. Place on a platter, cool, cover and refrigerate. Right before serving place back on the grill to warm through.
