grilled brocollini

Ingredients:

2 large stalks broccolini, ends trimmed

2 tablespoons olive oil

½ teaspoon kosher salt

1 tablespoon fresh lemon juice

 

Directions: 

Cut the broccolini into stalks and palce in a microwave safe dish. Add ½ inch of water. Microwave on high until almost tender, about two minutes (check after one minute, then 30 second intervals). Immediately plunge into an ice bath to stop the cooking process and preserve the bright green color. Drain completely. (This can be done earlier in the day. Wrap in paper towel and place in a Ziploc bag and refrigerate.)

Preheat grill to high. Remove the paper towel from around the broccolini. In the Ziploc bag toss the broccolini with the olive oil and kosher salt.

Grill the broccolini for one minute per side, until it begins to slightly char and is just tender. Serve immediately with a squeeze of fresh lemon juice and a twist of freshly ground pepper.

Note: the broccolini can be grilled an hour ahead of time. Lay flat on a cool rimed baking sheet at room temperature. Then right before serving place in a preheated 350 degree oven for five minutes or until just warmed through. Toss with lemon juice and pepper and serve.
