gravlax on cucumber rounds

Ingredients

4 ounces gravlax cured salmon, sliced

½ English cucumber, cut into ¼” rounds

2 ounces fresh dill sprigs, chopped and sprigs for garnish

 

Directions

Pat dry cucumber rounds with paper towel.

Cut each gravlax slice into ½” strips. Sprinkle edges lightly with fresh chopped dill. Loosely roll up each strip.

Place one rolled up piece of gravlax on top of a cucumber round.

Garnish with a small sprig of dill in the center.

(Cucumber rounds and gravlax spirals can be done 3 hours in advance, covered and refrigerated separately. Assemble right before serving)
