flatbread pizza

Ingredients:

2 flatbread pizza crusts

1 tablespoon olive oil

Garlic powder

1 ½ cups shredded mozzarella

Possible toppings (make ahead, cool, cover and refrigerate):

Yellow peppers and sweet onions, sliced and sautéed

Italian sausage, browned and crumbled 

Pulled chicken breast

Spinach and red onion, sautéed

Mushrooms and onions, sliced and sautéed

Small fresh mozzarella balls, sliced in half

Arugula

Prosciutto, thinly sliced

 

Directions:

Preheat oven to 450 degrees. Place the flatbread crusts on baking sheet covered with parchment paper (don’t use foil, it will stick to the cheese once it melts).

Drizzle the crust with little olive oil and sprinkle with garlic powder. Scatter with shredded mozzarella.

Top with one of the following:

Peppers, onions and sausage

Pulled chicken breast, spinach and red onion

Mushrooms and onions

Fresh mozzarella (once out of the oven top with arugula and prosciutto)

Bake until crisp and bubbly, about 10-15 minutes.

Cut into squares or strips and serve immediately.

Serves 2-3 (easily be doubled or tripled)
