Ingredients:

2 large croissants

Pint of cherry tomatoes

4 slices of bacon

2 tablespoons butter, softened to room temperature

2 tablespoons of mayonnaise

Several sprigs of Italian parsley

 

Directions:

Cut each croissant in half. Roll flat with a rolling pin.

Choose a fluted round cutter the approximate size of a cherry tomato. Cut the flattened croissant into rounds.

Meanwhile cook the bacon until crisp, drain on paper towels. Chop finely.

Combine the softened butter and mayonnaise. Whisk until smooth. Stir in the bacon.

Slice the cherry tomatoes, discarding each end piece.

Spread each croissant round with a generous slather of bacon spread.

Top with a cherry tomato slice, then a leaf of Italian parsley.

Can be made an hour ahead. Cover with a slightly damp paper towel.
