beet and goat cheese salad

Ingredients:

8 baby roasted beets, sliced

1/4 cup crumbled goat cheese

6 cups mixed greens

1/4 cup grape seed oil

1/4 cup sherry vinegar

1 Tbsp honey

1 tsp Dijon mustard

1 tsp dark sesame oil

salt and pepper

4 Tbsp candied pecans

 

Directions:

Combine oils, vinegar, honey, and mustard. Season with salt and pepper. Set aside.

Toss greens with 4 T dressing. Divide among four salad plates. Top with beets, sprinkle with goat cheese, drizzle with extra dressing. Sprinkle with pecans.

Serve Immediately.
