beef lettuce wraps

Ingredients:

¼ cup orange marmalade

2 Tbsp soy sauce

2 Tbsp hoisin sauce

1 Tbsp finely grated ginger

1 clove garlic minced

2 Tbsp canola oil

1 pound lean ground beef

1 bunch scallions, white and light green parts sliced

2 carrots, peeled and finely chopped

1 red pepper, seeded and finely chopped

12 Boston or Bibb lettuce leaves, rinsed and dried

 

Directions:

Whisk together the marmalade, soy sauce, hoisin sauce, grated ginger, and garlic. Set aside.

Heat the canola oil in a pan over medium heat and add the ground beef, scallions, carrots and peppers. Sauté until the meat is browned and cooked through and the vegetables are just tender.

Stir in the reserved marmalade sauce. Cook for one to two minutes until combined and slightly thickened. (This can be made hours in advance. Gently reheat before assembling.)

Top each lettuce leaf with heaping tablespoons of the meat mixture. Serve immediately.
