baked acorn squash

Ingredients

2 acorn squash, split lengthwise and seeded

2 T butter, room temperature

2 T brown sugar

2 T maple syrup

Additional butter for baking sheet

 

Directions

Preheat oven to 350 degrees

Line a rimmed baking sheet with foil. Butter the foil. Place the squash cut side down and bake for 30 minutes.

Meanwhile combine butter, brown sugar and maple syrup.

When the squash is tender turn over. Season with salt and pepper. Brush the insides of the halved squash with the butter mixture. Bake for an additional 15-20 minutes

 

Serves 4
