baby heirloom tomatoes, fresh bocconcini and basil

Ingredients:

2 pints baby heirloom tomatoes, sliced in half

8 ounces of fresh bocconcini or pearl mozzarella , drained

2/3 cup fresh basil, slivered

 

Directions:

Right before serving toss the halved tomatoes, drained mozzarella and slivered basil.

Season with salt and pepper.

 

Serves 8

 

(Note: the tomatoes can be sliced and stored separately earlier in the day. The mozzarella should be drained and basil slivered right before serving)
