Nothing quite wraps up the old and heralds in the new like caviar and champagne. Who can resist this dynamic duo. Whether it’s for a crowd or for something a little more intimate.

Trader Joe’s does a bang up job on delivering bling without breaking the bank. I am impressed with their American paddlefish caviar. Equally so with their Louise d’Estree sparkling Brut.

Don't be tempted to buy caviar that is next to the canned tuna in the grocery store It is very salty, watery with an unappealing aftertaste. It also stains absolutely everything it comes in contact with.

Caviar should always come from the refrigerated section. It is plump, firm and fresh.

There are obviously many tiers to choose from. If you are planning on incorporating caviar into a recipe a domestic variety is certainly suitable. A perfect accompaniment to your bubbly are caviar egg toasts.

Make toasted bread rounds from thick sliced country bread. Brush with melted butter and cut into rounds using a one inch round cutter. Bake in a 350 degree oven for about five minutes or until lightly toasted. Set aside (can be made earlier in the day, covered at room temperature).

For the egg salad combine three peeled hard boiled eggs finely chopped with two teaspoons mayonnaise, 1/2 teaspoon Dijon mustard, one tablespoon minced onion, freshly ground pepper, taste for salt (can be made the day before, cover and refrigerate).

To assemble top each toasted bread round with a little mound of egg salad. Finish with a small dollop of caviar. Serve immediately.

Just as caviar has many grades so does champagne. Only sparkling wine that comes from the Champagne region of France can be labeled “champagne”. All others are champagne methodoise. And while there is little that compares to a fine French vintage there are plenty of acceptable corks to pop. My personal favorites tend to be bruts (which are dry) and you'll find many festive Italian proseccos that can fit the bill without breaking the bank.
