cooking for one... or two

What a week. How about taking a break from all the divisiveness and embrace a side that really gets along? And because your tank is probably running on fumes, cut yourself some slack and take a quick trip down the freezer and pantry aisle for an accompaniment that will simultaneously comfort and wow.  

There is a reason there is an idiom for “getting along like carrots and peas”.

They go together really well.

Thankfully no one needs to shell a pea when flash frozen petite peas are at the ready. 

And look at this treasure trove I spied behind my grocer’s freezer door- Parisian carrots. Picking up the bag felt like a quick trip to the left bank. 

Then to round out this duo grab a box of an oldie but goodie- Near East Rice Pilaf. Cook according to the directions on the package.

Bring a half-filled pan of water to a boil. Add a pinch of salt and the desired amount of frozen carrots. Cover and simmer for four to five minutes.

And a complimentary amount of frozen petite peas. Stir and simmer for another minute.

Drain and return the carrots and peas to the warm saucepan. Add some butter. Season with salt and pepper.

Whatever you put on this plate- salmon, chicken, a chop, you name it... guarantee there’ll be lots of support across the aisle.
