In the Cayman Islands we had some incredible meals on Seven Mile Beach- Agua, Blue and Luca. It’s funny how memorable dishes are; they sometimes come from the most unexpected of places. This takeaway is from the endless breakfast buffet at the Marriott, with lines almost as ceaseless. Because we were dining out (and large) in the evenings our coveted breakfast was a made to order egg white omelet. 

Having just spent the last 45 minutes with my newest New Jersey acquaintances haggling for beach chairs, the last thing I wanted to do was strong arm one in line for a healthy egg. That’s when I spied it, right before the granola and after the woman who snagged the last seat in my hopeful run for seven consecutive loungers- an egg white frittata. They were sitting pretty ready for the taking.

With a houseful of girls who at some point would rise and shine I thought I’d surprise them with their own healthy start.

A quick sauté of onion, red pepper and spinach.

Topped with two egg whites. And placed in a pan filled halfway with boiling water. Cover and cook until firm, about six minutes.

Warm up some fresh salsa on 50% power in the microwave for a minute.

Serve with fresh berries and a sprig of mint.
