Nothing beats Saturday night supper for four. As fortune would have it my husband and I were invited for such a dinner last weekend. And to up the ante, not only were our host and hostess delightful friends but incredible cooks. Simmering bolognese greeted us we entered, letting us know we were in for a real treat. But what caught me by surprise was the incredible dressing on our salad. It had a bit of a bite and a subtle sweetness. I knew I had to have the recipe. As I begged the favor my friend said of course… just as long it appears in the blog.

So here it is- Vicki’s chutney garlic dressing.

Place the Major Grey's chutney, pepper flakes, lemon juice, water and garlic in a tall bowl. With a hand blender blend until smooth.

With the motor running slowly add the oil in a steady stream.

Blend until emulsified. Season with salt and pepper.

At home I drizzled this dressing on some baby greens.

Sliced up some baby beets.

Easy to do with ready steamed beets from Trader Joe’s.

While I was there I picked up some of their candied walnuts.

And the perfect garnish, a few dollops of whipped goat cheese.

This starter is a certain success.
