perfecting the "done before they arrive" party- a work in progress
Lunch on the go can be a dilemma. On the road options really don’t offer suitable alternatives. We’re faced with a pre-noon departure to kick off a family wedding on the east coast. Time to channel the 4th Earl of Sandwich to concoct a satisfying meal on the fly. Since Thanksgiving is the mother of all family gatherings, how about a twist on that post day staple- turkey and goat cheese sandwiches with cranberry sauce.
Start with bakery fresh seed studded bread.
Top each slice of bread with one teaspoon of goat cheese, spread to the edges.
On half of the bread spread one teaspoon of cranberry sauce on top of goat cheese.
Top the cranberry layer with thinly sliced turkey.
On the other layer pieces of romaine on top of the goat cheese.
Put the two together to form four sandwiches. Slice in half on the diagonal.
To transport wrap each sandwich in a piece of waxed paper.
Seal with scotch tape.
