Some of the best things in life are the simplest. This holds true for the tender gentle green- mache. Also known as lamb’s lettuce this tiny dark green leaf from France with it’s nutty flavor is making a big flavor splash here in the United States. Because it is a low grower and must be hand cultivated it makes it a challenge for mass production. It’s this apparent love and care that goes into its cultivation that makes it a sublime treat on your plate, especially when tossed with a duo of other fine ingredients. Here is the effortless and elegant mache salad with black truffle salt.

mache

Black truffle salt is the ultimate secret weapon.

It is the little black dress of seasonings that slips in almost undetected and then wows the crowd with its exquisite and undeniable taste.

walnut oil

High-end walnut oil rounds out this trio. It has a rich yet smooth nutty flavor that gently coats the leaves and provides the perfect platform for the elegant grains of black truffle infused sea salt.

This is it- a handful of delicate mache, a drizzle of walnut oil and a pinch of truffle salt.

Gently tossed together, and ready to take your taste buds back to 17th century France when refined elegance was anything but mundane.

Note: Mache can be found at Trader Joe’s and in the produce section of high end grocery stores. Williams and Sonoma sells black truffle salt. Sur la Table carries a superior walnut oil which might also be on the shelves of an equally superior grocery store- make sure it is dark and nutty and not a clear vegetable type oil.
